Crab Salad on Ciabatta Bread:
Ingredients:
-imitation crab meat  (I am in love with these 100 calorie packets
-cucumber
-avocado
-red onion
-cilantro
-mayo
-sriracha sauce
-ciabatta bread


In bowl:
1. use one packet of crab meat (it is enough to make two sandwiches) & dice up crab
2. dice 1/3 avocado into small pieces  (best to use an avocado that is still a little hard)
3. add one slice of red onion diced up
4. add a handful of chopped cilantro

5. in a separate small bowl mix a spoonful on mayo with sriracha sauce to desired spiciness, add some garlic powder and pepper to your liking
6. once mayo is mixed up add to salad and leave some left over to put on your bread

7. toast the bread then add light layer of mayo mixture
8. assemble sandwich and add sliced cucumbers


Egg Sandwich

Ingredients:
-egg
-whole grain english muffin
-crystal farms jalapeno cheese spread
-avocado
-jalapenos  (i use sweet and hot)
-cilantro
-2 baby bella mushrooms

1. Spray non-sticking spray in pan.  Slice up the mushroom and sautee in pan with the jalapenos until mushrooms are cooked.


2. Once mushrooms cooked add cilantro.  Re-spray pan with Pam and then add egg to pan.  I like to also add pepper and a little garlic to my egg while it coooks.  Cook egg to your liking.  (Since I am pregnant I have to cook the yoke completely.)



3.  Once english muffin is toasted well, spread the cheese onto the muffin.  Then add sliced up avocado.  Put the mushroom mixture on both sides of the muffin and add the egg and you are done.


I eat this sandwich EVERY morning.  It is so tasty and around 300 calories.  Plus it takes no time to make. 

Varations:  sometimes I like to add sundried tomatos and spinach to my mushrooms.  If I feel like this I skip the jalapenos and cook the mushrooms in a little marsala wine.  I also use a garlic laughing cow cheese instead of the jalapeno cheese.  This sandwich is so good and you can adjust it to the ingredients you have in your home. 

note:  Crystal Farms regular cheese is NOT good- but the spreads taste just like laughing cow but is half the price.  Plus, laughing cow has yet to make a jalapeno cheese spread.

Spinach and Portabella PotStickers

I made up this dish by pure accident.

Ingredidents:
-wonton wrapers
-portabella mushroom
-spinach
-sundried tomatos
-marsala wine
-ricotta cheese
-mozzerella cheese
-chicken broth

1. In a pan sautee the mushroom, sundried tomatos, and spinach until mushrooms are soft.  First start with the mushrooms and sundried tomatos in the pan.  Then add a small amount of marsala wine to help soften the mushrooms.  Finally add spinach til cooked.



2. Mix mixture in bowl with ricotta cheese and mozzerella cheese.  I also added some basil, parsely, and garlic powder.  (Don't pour in any excess liquid from the pan into the bowl.)



3. Make wontons.  Don't overstuff them or else they won't stay together.  Have some water handy to use to keep them together. 



4. Pam a pan and add the wontons face down.  Let them brown and then flip them over.  Add some chicken broth and let them finish cooking... about 4 more minutes.





5. Serve with yummy dipping sauce and your wontons are complete.  Next I am going to try cream cheese and crab wontons...yummy.  (this dipping sauce is a mixture of sour cream and siracha sauce)
